The waters around Thailand offer a cornucopia of seafood and the jewel in the crown is undoubtedly the Andaman Sea. Offerings include snapper picatta with couscous, harissa, and crispy leeks. Also excellent is sea bass poached in lightly herbed acqua pazza broth with garlic, tomato, celery, basil, lime, and Italian parsley. And those with a hearty appetite will appreciate succulent grilled giant tiger prawns, an Andaman specialty, served with crushed potatoes, broccolini, sundried tomato salsa, and lemon butter sauce. Fresh and delicious, this is seafood at its finest.
