XL Tiger Prawns at Up & Above Restaurant
Prized for their succulent flesh and delicious grilled, barbecued, fried or steamed, XL tiger prawns take pride of place on Up & Above Restaurant’s à la carte menu this June. Appetisers including tiger prawn salad with fennel, tomato, wasabi rocket and mango salsa; and chilled tiger prawn with green mango som tam and spicy aromatic dressing, complement main course offerings including grilled marinated tiger prawns with cous cous and a spicy harissa chilli paste; and a green curry with tiger prawns, eggplant, pineapple and coconut. In a culinary nod to the Mediterranean, also available is tiger prawn saltimbocca, a wonderful dish of tiger prawns seasoned with sage, wrapped in prosciutto and served with creamy polenta, crisp endive and a piquant orange butter sauce.
