Seasonal Japanese Shirasu-Karaage at Up & Above Restaurant

An early summer treat, healthy Japanese whitebait (shirasu) are known for their high protein and calcium content and relatively low in fat and sodium. Prepared in a similar fashion to tempura, the tiny fish are fried (karaage) in light oil and brought to the table with yuzu mayonnaise, wasabi powder and a brown paper bag. In a bit of culinary theatre the service team places the fish in the paper bag and add the wasabi powder to taste. The bag is secured tightly and shaken well to coat the fish, which is then plated and enjoyed with the citrusy yuzu mayonnaise. Light and bright with flavour, shirasu-karaage is the perfect way to start any meal.
