Uni Stars at Up & Above Restaurant

In Japan, where the fruits of the sea feature prominently in the national cuisine, sea urchin roe is a particularly prized delicacy. Known as uni, it can be eaten raw in sushi and as sashimi but its strong marine flavours make it a great foil for other robust dishes. Which is why uni takes centre stage at Up & Above Restaurant in a special menu available from October until the year’s end. 

The feast includes a wonderful creamy sea urchin risotto with roasted nori seaweed, sea urchin spaghetti with ikura, tiger prawn and onsen egg, plus a hearty roasted Japanese wagyu with uni, mitsuba pomme mouseline and dai dai beef jus.
