This exquisite journey bridges the disciplined elegance of traditional Japanese Kaiseki with the refined artistry of Edomae-style sushi. Guided by the principles of Shun, savouring ingredients at their absolute peak, Chef Oishi crafts a multi-course menu that honours seasonal ocean treasures, meticulous knife work, and subtle flavour contrasts.
